Chop up your zucchini to make this cheesy Zucchini Ground Beef Casserole. Not only is it KETO and PRIMAL, it makes a mouthwatering family dinner!

Ok, so yes that is my THIRD zucchini recipe in just a month, but only because zucchinis have overtaken our garden!! So, after making super moist Keto Mini Zucchini Bread Loaves and Keto Creamed Zucchini, I decided to add some meat to my next creation Zucchini Ground Beef Casserole!

Zucchini is rather mild in flavor, so I decided to add some herbs and parmesan (a hard cheese with a strong flavor). This combination of flavors turns this keto dish into one irresistible dinner!

What I love about casseroles is that they can be easily customized. Add your favorite herbs, spices, and cheese to make this dish just right for you and your family. My kids are not big fans of zucchini (unless it is hidden in sweet zucchini bread), but they actually finished their plates and then some!

The casserole is completely GRAIN-FREE and makes a wonderful keto or primal dinner. Use high-fat ground beef and full-fat cheese to make it healthy and irresistible!

Tips for mouthwatering Zucchini Ground Beef Casserole!

Meat. Whenever possible use organic meat. Don’t buy that lean ground beef but chose the fatty meat that gives your food flavor and healthy fat.

Cheese. To top off the casserole, I use mozzarella and parmesan. Grate the parmesan yourself. The parmesan powder you find in the store has all kinds of additives that you want to avoid.

Casserole dish. You will need a glass or ceramic casserole dish that’s about 13″x9″. I use a Pyrex glass dish. It comes with a lid, which works great for storing leftovers in the fridge.

Equipment

  • glass or ceramic casserole dish (13"x9")

Ingredients
  

  • pounds ground beef
  • 1 tsp salt
  • 1 large zucchini or 2 small, chopped
  • 1 cup heavy cream
  • 2 tbsp sour cream
  • ½ tsp salt
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp thyme
  • ¼ tsp garlic powder
  • tsp ground black pepper
  • cups mozzarella shredded
  • ½ cup parmesan grated

Instructions
 

  • Over medium-high heat, heat a large skillet with oil or bacon fat. Add ground beef and 1 teaspoon of salt. Mix and crumble the meat. Cook until meat looks brown and crispy.
  • Lower heat to medium-low, add chopped zucchini and cook with lid for about 10 minutes until zucchini is softened.
  • Preheat oven to 375 °F.
  • In a small bowl, combine heavy cream, sour cream, spices, and herbs. Pour cream mixture into the skillet and stir. Turn off heat and scrape the bottom of the pan with a spatula.
  • Pour meat mixture into your casserole dish. Cover with shredded mozzarella and sprinkle with grated parmesan. Bake for 25 minutes.
  • Store leftovers in an airtight container in the fridge for up to 5 days.

Notes

You can make this dish ahead of time. Get everything ready in the casserole dish, cover the dish, and place into your fridge. Bake within 3 days.

    We had this for dinner last night and it was a hit with everyone – even my picky eater! I was out of sour cream so used cream cheese instead and that was tasty, too. I appreciated how quick and easy this meal was to make. And I really loved that my kids ate zucchini without complaint when it was mixed in this casserole!
