These adorable Keto Zucchini Bread Mini Loaves are super moist, chewy, and just right for using up all those zucchinis! One recipe makes 4 loaves.

It is that time of the year again: zucchinis are taking over my garden! My kids couldn’t be more excited because they love zucchini bread, especially with chocolate chips! My husband on the other hand prefers the bread plain, and my favorite is a combination of pecans and chocolate chips. Instead of baking 4 large loaves to make every household member happy, I have decided to make mini loaves!

What’s so great about zucchini!

I loaf incorporating zucchini into my recipes. For one, every summer our garden is overflowing with this lovely vegetable, and baking with zucchini is simply a great way to add some vitamins and antioxidants to your baked goods, like my Zucchini Brownies.

Unlike many winter squashes, zucchini is a low-carb squash that works great for a keto lifestyle. One whole medium-sized zucchini has only about 7 grams of total carbs! It also has a neutral taste that blends well with other ingredients. Have you tried my Keto Zucchini Tortillas?

My mini-loaf pan!

Five years ago, I bought this strapped mini loaf pan and have been a huge fan since! It is a set of 4 mini loaf pans strapped together, made of non-stick aluminized steel. I love that it is high quality and made in the U.S.A.

The keto mini loaves make great gifts and are easy to customize whether you like your keto zucchini bread plain, with nuts, chocolate chips, or maybe a combination of toppings. Oh, and they look super adorable! But the best part about them is how rich and moist they are thanks to my secret weapon – Greek yogurt! Unlike other zucchini breads I had in the past (including high-carb, wheat versions), this keto bread is not cakey or dry. You won’t be able to resist!

Tips for making moist Keto Zucchini Bread Mini Loaves!

Bread pan. You will need 4 mini loaf pans to make this zucchini bread. I recommend the strapped together loaf pans by USA Pan Bakeware, but you can certainly try others. Make sure to grease the inside of each pan before you add the dough (I use butter for greasing).

Zucchinis. You will need 2.5 cups of grated zucchini. That’s about two small zucchinis or one large one. Place the grated zucchini in a colander in your sink, sprinkle with salt, and let sit for 15 minutes. With your hands squeeze out the liquid before you combine the grated zucchini with the rest of your dough.

Yogurt. Yogurt is the secret ingredient that makes this keto bread so yummy and moist. Make sure to use full-fat Greek yogurt.

Sweetener. I use Swerve brown sugar substitute for this recipe. It really gives the bread a rich, sweet flavor. However, if you only have regular erythritol on hand, you can use that, too.

  • Preheat oven to 350 °F. Grease 4 mini loaf pans.
  • Place grated zucchini into a colander and sprinkle with salt. Let sit for 15 minutes in your sink or over a bowl.
  • In a large bowl, whisk together yogurt, eggs, brown sugar substitute, melted butter, and vanilla. Set aside.
  • In a small bowl, whisk together almond flour, psyllium husk, baking powder, and cinnamon. Add to the wet ingredients and combine well until smooth.
  • With your hands, squeeze the grated zucchini to remove excess liquid and add to the bread dough. Combine well and let sit for 5 minutes.
  • Divide dough into 4 equal parts. Add toppings if desired. Spread dough into the 4 greased mini pans. Bake for 45 minutes.
  • Store leftovers in an airtight container in the fridge for 5 days. To freeze, place loaves in individual airtight container or freezer bag and store in freezer for 2-3 months.

Notes

To add different toppings, divide dough into 4 equal parts and add desired toppings (e.g. sugar-free chocolate chips, pecans, or sliced almonds). Stir in the toppings and then spread the dough into your mini loaf pans. If you want the same topping for each loaf, add the topping before you divide up the dough into 4 equal parts.
