You will love how easy it is to make this delicious Keto Waffle Cake! Perfect for teatime, brunch, or a fun birthday dessert!

When I served this Waffle Cake for our breakfast the other day, the eyes of my family (including my husband’s) grew wide! Each bite was delicious and I’m planning on making this cake again for our Easter brunch. Beware – super rich and filling!

It’s a super easy cake to make. Keto waffles layered with a cream cheese filling and strawberries. You don’t need to worry about baking layers of cake in the oven, but simply make each layer for your cake in your waffle iron in a minute! Beat the filling with ingredients you already have in your fridge (heavy cream and cream cheese), and you are ready to assemble! For our fancy breakfast that day, I prepared everything the day before, assembled it and kept in the refrigerator. So, it was a completely hassle-free morning for me that day.

Tips for making this fun waffle cake!

Waffles. I used my Keto Yogurt Waffles recipe to make the five waffles for this recipe. The waffles are soft and airy, and don’t taste low-carb.

I think this waffle cake looks best with large waffles make with a Belgium waffle iron. However, if you have a standard-size waffle iron, this will work, too! You will just end up with more, thinner waffles.

Filling. All you got to do for the filling is beat softened cream cheese with heavy cream, powdered erythritol (I use Swerve confectioners), and vanilla extract. It’s that easy and fast.

Berries. I used chopped strawberries for my cake, but you can certainly add other berries, too (like blueberries, raspberries, blackberries, or a combination).

You can also leave out the berries completely to lower the carb count of this cake!

Assembly. On a serving plate, start off by topping one waffle with 1/6 of the cream, followed by your berries. Place the next waffle on top, and then simply repeat this process until you used up all your waffles. Finish off with one last layer of cream and your optional toppings.

Toppings. I garnished my cake with shaved sugar-free chocolate, strawberries, and powdered erythritol. You can also try sugar-free chocolate chips, chopped nuts, and different kinds of berries.

Waffles

  • Turn on the waffle iron.
  • In a large bowl, add all the waffle ingredients and whisk until the batter looks smooth.
  • Grease iron with butter or coconut oil. Pour a little less than ⅔ cup of the batter into the Belgian waffle iron (if you have a round classic waffle iron only use about ¼ cup). Close the lid (and rotate if you have a rotating iron).
  • Cook until waffle looks golden brown (about 3-5 minutes). Repeat with remaining batter. Set waffles aside and let cool down completely.

Filling

  • In a medium bowl, beat cream cheese until creamy. Add heavy cream and beat until soft peaks form. Add sweetener and vanilla extract and beat until combined.

Assembly

  • On a serving plate, start off by spreading 1/6 of the filling over one waffle. Sprinkle with some chopped strawberries. Place the next waffle on top, and then simply repeat this process until you used up all your waffles. Finish off with one last layer of cream and your optional toppings.
  • Keep refrigerated until ready to serve.

Notes
