Do you eat enough fish? I know I sometimes don’t, but with this incredibly delicious baked salmon recipe, this won’t be an issue any longer! Salmon is an extremely healthy fish that’s high in protein and meets about a quarter of the recommended daily intake of vitamins B3, B5, B6, B12, vitamin D, vitamin E, and selenium. That’s what I call a superfood, for sure!

I love the combination of flavors in this keto-friendly salmon recipe. The addition of Champagne (or sparkling white wine) brings some zesty and acidic flavor to the wonderfully creamy sauce. Perfect for a meaty fish like salmon. The sauce, just like the fish, is low-carb and grain-free!

Tips for making a flaky Keto Salmon with a Champagne Cream Sauce!

Champagne. The sparkly is the star of this show! Pick a brut or dry wine. And it doesn’t need to be actual Champagne, a sparkling white wine will work great, too. You don’t need to buy the most expensive bottle in the store, but do chose a higher quality wine, so you can enjoy a glass of it with your dinner!

Salmon. Go for the wild-caught variety. You can either buy a whole fish filet or cut up filet. As long as the fish weighs about 1 pound, it will work for this recipe.

Spices. To flavor the sauce, I use garlic, thyme, and rosemary. Of course, you can play around with the flavors a bit. Dill, chives, and sage also work great with salmon.

Equipment

  • large casserole dish (glass or ceramic)

Ingredients
  

  • 1 pound salmon filet whole filet or 4 filet pieces ¼ pound each, defrosted
  • salt
  • pepper
  • 1 bunch green onions sliced

Champagne Cream Sauce

  • cup brut or dry Champagne or sparkling white wine
  • cup sour cream
  • ½ cup heavy cream
  • 2 cloves garlic
  • tsp rosemary dried
  • tsp thyme dried
  • ¼ tsp salt

Serving

  • 1 lemon quartered

Instructions
 

  • Preheat oven to 350 °F. Grease a large casserole dish.
  • With a paper towel, pat-dry the salmon, and sprinkle salt and pepper on both sides. Place into casserole dish and cover with sliced spring onions.

Champagne Cream Sauce

  • In a medium sauce pan over medium-low heat, combine Champagne (or sparkling white wine), sour cream, heavy cream, and spices. Whisk, while bringing the sauce to a simmer. Remove from heat.

Baking and Serving

  • Carefully pour the sauce over the salmon. Bake for 25 minutes until the fish looks flaky. Serve with lemon wedges and sautéed or steamed vegetables (and a glass of the remaining Champagne if desired).
