I had my first root beer float when I moved from Germany to the states as a student. It was a dry, hot summer day and I remember thinking, “It can’t get much unhealthier than this, but MAN this is good!” Well, now I’m able to enjoy this sweet, bubbly treat without having to worry about the health consequences or my blood sugar!

My homemade root beer floats cannot only be part of your healthy keto lifestyle, but they are also kid-friendly! The root beer is completely sugar-free and caffeine-free, while the keto vanilla ice cream only has 1 gram of sugar per 1/2 cup of serving!

Probably the hardest part of making root beer is to decide what to add first, the ice cream or the root beer? Add the ice cream first. That way your glass won’t overflow. My favorite way of serving floats, is to add one scoop of ice cream, followed by some root beer, followed by another scoop of ice cream, and then some more root beer. This will result in a very foamy and creamy float. YUM!

Tips for creamy, foamy root beer floats!

Chill. After you make your root beer, transfer your bottle or pitcher to the fridge to chill. I also like to frost my serving glasses by putting them in the freezer.

Ice cream. While churning your ice cream will only take 20 minutes, the fresh ice cream will have a soft serve texture. For a firmer ice cream texture, you need to freeze the ice cream for about 1 to 2 hours.

How much? Quantities will slightly vary, depending on the size of your glasses and your preferences. I use about 2 scoops of ice cream and 1 cup of root beer per serving.

Toppings. Whipped cream is optional. The floats are very creamy just by themselves, but they do look fancier with a dollop of whipped cream. Enjoy with both a long spoon and straw (I love these rainbow metal straws!).

  • In two large frosted serving glasses, add one scoop of keto vanilla ice cream each. Pour half a cup of sugar-free root beer in each glass. Repeat with remaining ice cream and root beer.
  • If desired, serve with a dollop of whipped cream. Enjoy!
