Don’t you just love the sweet smell of freshly baked cinnamon bread? Now you can bake your own Keto Cinnamon Swirl Bread to create a delicious healthy treat for the whole family!

I’ve got to admit, I was pretty excited when I figured out how to make keto-friendly cinnamon swirl bread. I knew that my kids and husband would love the result after taking the first bite. The bread is soft and chewy, and incredibly aromatic. It is sweet, but not overly sweet (like the store version). And I just love that my whole house smells like warm cinnamon whenever I bake it!

Cinnamon swirl bread was one of my go-to treats during my first two pregnancies (before I found out that I had gestational diabetes). Once I started following a low-carb diet, I tried several recipes for keto cinnamon swirl bread, but was not too impressed with the results. The breads tasted cakey and often dry, and didn’t remind me of the sweet chewiness that I liked so much about regular wheat bread. Once I learned that some cream cheese and ricotta work amazingly well in my Keto Rustic Bread, I knew that I would be able to make the kind of cinnamon bread my taste buds desired!

TRY MY KETO RUSTIC BREAD

This cinnamon swirl bread, however, is close to perfect! I’m not pregnant anymore, but my cravings for it have never quite gone away. It tastes amazing with some butter or even made into French toast (recipe coming soon!!).

Follow my steps for a chewy bread with an amazingly sweet and buttery cinnamon swirl!

Dough. After combining all the ingredients, your dough will still feel very sticky and moist. Let it rest for 5 minutes and your dough should become much firmer and just a little sticky to the touch. If it is still too moist and sticky to shape, add 1 tablespoon of coconut flour and let rest for another minute (repeat if necessary).

Shaping. You will shape the loaf on a piece of greased parchment paper (I used avocado oil for greasing, but olive oil will work, too). With slightly wet hands, shape the dough into a 7″x16″ rectangle. I keep a bowl of water next to me to wet my hands whenever the dough sticks too much. You won’t need a rolling pin, but can simply press down on the dough to shape it. After you smeared the dough with the cinnamon butter mix, roll it up tightly with the help of the parchment paper: lift the paper, roll, carefully peel it back, and repeat until you rolled it all up.

Baking. To transfer the roll into your 9″x5″ loaf pan, lift it by holding the parchment paper and then carefully dropping it into the pan, seam side down. Brush the top with melted butter and bake.

  • 1 tbsp butter melted

Instructions
 

Dough

  • In a large bowl, whisk together cream cheese and ricotta until smooth. Add the eggs and erythritol, and whisk in well.
  • Add all the remaining ingredients and whisk until smooth. The dough will still feel very sticky at this point. Let rest for 5 minutes for the moisture to be absorbed.

Cinnamon Swirl Mix

  • While the dough is resting, combine butter, cinnamon, erythritol, and brown sugar substitute in a small bowl. Stir with a spoon until the mixture looks creamy.

Assembly

  • Preheat oven to 350 °F. Line a 9"x5" loaf pan with parchment paper.
  • Transfer your dough onto a large greased piece of parchment paper (about 10"x20"). With wet hands, slowly press out the dough into a 7"x16" rectangle.
  • Spread the cinnamon butter mixture evenly over the dough, leaving a 1-inch border. Roll up into a tight log by carefully lifting a small part of the dough with the parchment paper, rolling, and peeling off the paper (repeat until the whole rectangle is rolled up). Pinch the ends to seal.
  • Carefully lift up the log by holding the parchment paper and roll it into the loaf pan, seam end down. Brush with the melted butter and bake for 1 hour.
  • Take the Keto Cinnamon Swirl Bread out of the loaf pan and let cool down before you cut your bread with a serrated knife.

Notes
