Eggnog is a traditional custard drink served during the holiday season. It is usually served chilled and is sometimes spiked with rum or whiskey. After Mulled Wine, it is probably my favorite holiday drink. I just love the creamy, thick texture of it. Add some cinnamon and nutmeg to it, and it tastes like Christmas to me.

What is KETO Chocolate Eggnog?

Unfortunately, traditional eggnog is not exactly keto-friendly. It is made with plenty of sugar (and sometimes even corn syrup!) and milk. But don’t you worry! My Chocolate Eggnog is keto and made without any added sugar! With this recipe, you can celebrate the holidays without having to worry about your weight or blood sugar.

To make it keto-friendly, we will use erythritol, almond milk, heavy cream, and sugar-free chocolate chips. The result will be a rich and milkshake-like chocolate eggnog that you won’t be able to resist!

How to make eggnog!

There are a few different ways to make eggnog. You can cook a custard or use a raw egg mixture. Leave the whites out or add whipped egg whites. Use heavy cream as is or beat it first.

For our chocolate eggnog, we will cook a custard with yolks, heavy cream, and almond milk (you can also use a different kind of milk). Heating the custard to 160 F has the advantage of making the raw eggs food-safe and also allows us to melt the chocolate in this hot mixture.

Beat the yolks. Beat the yolks with the erythritol until they look creamy and pale-yellow. This will take a few minutes. Only then whisk in half a cup of the almond milk.

Heat the cream. In a medium saucepan, heat the heavy cream with the remaining cup of almond milk just until you see steam. Turn the heat down to medium-low and pour in your egg mixture. Under CONSTANT whisking, heat mixture until it reaches 160 °F (or becomes too hot to dip finger in). This will take about 6-8 minutes. DON’T LET THE MIXTURE COME TO A BOIL.

Add the chocolate. Remove the mixture from the heat and add your chocolate chips. Whisk until the chocolate is completely melted and the eggnog looks creamy. Then add the vanilla extract and spices. Instead of chocolate chips, you can also use chopped up chocolate. If you can’t find sugar-free chocolate, try 90% or higher chocolate. You may want to increase the erythritol content if you go that route.

Chill. Pour the chocolate eggnog into a bowl and let it come to room temperature. Cover the bowl and chill in the refrigerator for about 4 hours until completely chilled through.

Make a DOUBLE batch. Make some extra and use it for this LUSCIOUS Keto Chocolate Eggnog Cheesecake!
