It really only takes 5 minutes to prepare the cream for this super creamy vanilla ice cream. Then all you have to do is churn it for 20 minutes, and you can enjoy your own homemade ice cream that’s low-carb, and has no added sugars or fillers!

I think everyone should have one good vanilla ice cream recipe in their repertoire. Vanilla not only goes well with a variety of other desserts (think fudgy brownie with a scoop of ice cream), but also works great as a basis for a rainbow of other ice cream flavors. Add strawberry puree to make strawberry ice cream, or how about cocoa for some chocolate ice cream? Experiment with different extracts (e.g. maple or mint), nuts, or chocolate chips! Your imagination is the limit!

After making this, you’ll wonder why you have ever bought keto ice cream at the store that (let’s be honest) does not taste so good. You will only need a handful of ingredients, an ice cream maker, and a spoon to indulge in this frozen treat!

Some quick tips for creamy keto vanilla ice cream!

Allulose. Allulose is a natural, low-carb sugar that tastes like regular sugar. I love adding allulose to my ice cream recipes because it keeps even frozen desserts creamy. If you don’t have allulose on hand, you can substitute with powdered Swerve Sweetener or another natural sweetener, but it will make your ice cream harder after freezing. Also, do not increase the amount of allulose in this recipe, as too much of it can actually prevent the ice cream from solidifying.

Churning. Yes, you will need an ice cream maker for this recipe. This will prevent large ice crystals from forming and whips air into the cream mixture, resulting in the smooth and rich flavor we desire! I use this machine and it has worked well for me for over six years now. After churning, the ice cream will have a soft-serve texture to it. It will become firmer after freezing it for 1-2 hours.

Toppings. Keto vanilla ice cream tastes good by itself, but I think it tastes EVEN better with some toppings. My favorite topping is macerated strawberries, as the fruity flavor of berries just works really well with the mild vanilla aroma. You can also try whipped cream with fresh berries or German fruit pudding.

  • In a large bowl, whisk together all ingredients.
  • Pour the mixture into the canister of an ice cream maker and churn according to manufacturer’s directions. (It takes about 20 minutes with my machine for the ice cream to reach soft-serve texture.)
  • Transfer the vanilla ice cream to an airtight container and freeze for another hour or two to reach a firmer consistency. Enjoy with macerated strawberries, fresh fruits, German fruit pudding, or other toppings.

  2. Is this icecream cristalized once it’s done? I have heard putting a very small amount of vodka will fix that?

    • It does crystallize some, but not as much if you use allulose. Just take it out of the freezer 15 min before serving.
      I have heard the same thing about vodka, but haven’t tried that. Give it a shot (literally 😉) and see if that works. (As long as you won’t serve it to kids.)
